- Prepare of Sugar Cookie Base.
- It's 1 1/2 cup of All Purpose Flour (I used unbleached).
- Prepare 1/2 cup of Softened Butter.
- Prepare 3/4 cup of Sugar (I used a mix of brown and white sugar).
- It's 1 of Egg.
- It's 1 tsp of Vanilla Extract.
- It's 1 tsp of Baking Soda.
- Prepare 1/2 tsp of Baking Powder.
- It's 1 pinch of Salt.
- Prepare of Cream Cheese Frosting.
- Prepare 1 packages of (8oz) Softened Cream Cheese (I used light philadelphia).
- You need 1 cup of Icing Sugar.
- Prepare 1 tsp of Vanilla Extract.
- You need of Fruit Topping.
- It's 1 of Any Fruits you like! I used, strawberries, blueberries, raspberries, kiwis anf green grapes!.
This fruit pizza is like no other! As opposed to the traditional cookie crust, this one is made with a delicious corn flake crust that is to die for! Best served with the fruit chilled. A delicious sugar cookie crust with cream cheese frosting topped with your favorite fruits.
Delicous Fruit 'Pizza'! instructions
- Preheat oven to 375℉ and line a pizza tray with parchment paper.
- In a bowl mix together the flour, baking soda, baking powder and the pinch of salt and set this aside after mixing together well.
- With your mixer, mix together the sugar and softened butter and beat until nice and fluffy.
- Now add in the egg and vanilla and mix until they are incorporated.
- Add flour mixture into the mixture and mix slowly until cookie dough consistency.
- Lightly dust the parchment paper with some flour (so it's easier to spread the dough incase it's really sticky!).
- Spread the dough into a circle shape that's about 1/4 inch thick. The cookie WILL rise a bit so keep that in mind. Also be sure to leave some room between you dough form and the edge of the pizza pan so there's enough room for it to spread a bit.
- Bake for about 10-15 minutes or until a nice golden brown and allow for it to cool completely before icing.
- While your cookie is cooling prepare the icing. In your mixer combine all icing ingredients and mix until nice and whipped.
- While the cookie is still cooling, you can cut up and peel any of the fruits you want to use.
- Once cookie is completely cooled spread on icing (I used and needed all of the icing I made).
- Decorate to your liking with fruit! I find this part the best! Enjoy! So so good!.
